1) At first we need to import our stock image (water melon)

2) Now I create a duplicate copy of the layer(shortcut-Ctrl+J)

3)Then apply Black and white effect on that image(simply go to Image>Adjustment>Black and White)

4) Now I select some part of water melon(as you desired) with the help of"Magnetic Lasso Tool" in Photoshop.

5) Now Erase the selected part with "eraser tool".

6) Now you see our desired coloring effect is done in our selected part.
